Autumn's Easy, Versatile No-Bake Cheesecake.
This easy cheesy no-bake cheesecake it by far my favourite!
I always make this for one of our Christmas gatherings. It's light, and you can customize the recipe to thrill your guests with their favourite toppings!
Some of my kids just like it with raspberry topping. I love banana cream pie, so I layer bananas in mine. Gosh... I'm getting hungry just writing about it!
Here's how I make it...
Graham Crust:
2 cups graham cracker crumbs
1 tsp cinnamon
¼ cup brown sugar
½ cup melted butter or margarine
OR Oreo Crust:
2 ½ cups Oreo crumbs
½ cup melted butter or margarine
Combine in bowl. Then spread evenly and press in a 9x13 baking pan. Bake at 350 for 8-10 min
Set aside to cool!
Filling:
Stiffly whip 2 cups whipping cream and set aside.
Combine:
2 (8 oz) pkgs of cream cheese (at room temp)
2 cups icing sugar
2 tbsp vanilla
Once these 3 ingredients are mixed smoothly, stir in the whip cream
After crust is cold, spread a thin layer of cream cheese filling, then add sliced bananas (I always add a bit of lemon juice to my sliced bananas first to keep them from browning).
Then cover with the remainder of cream cheese filling.
You can make this plain without the bananas and use real fruit topping, whatever your hearts desire!
You can leave the top plain, sprinkle with crumbs, or use chocolate drizzle too!
PRO TIP: To add a hard chocolate drizzle, microwave chocolate chips with a little milk or cream, stir together and put in a plastic bag to drizzle a chocolate topping. It hardens in the fridge!
